The part about how to cook the beans is short and cute, but far from the truth…Fresh green beans should be blanched for about 7 minutes, it’s not easy, you want them to be cooked, so they don’t make that weird squeaky sound when you bite them, but also you don’t want them overcooked. But if you get the cook time just right on green beans, they are magic.

What to buy?

  • 500g of large potatoes – cut into wedges
  • Olive oil
  • Salt and pepper
  • 2 tbsp almonds slices or finely chopped almonds
  • 300g of fresh green beans – ends pinched off
  • 1 package of Like Schnitzel
  • Plant based mayo
  • ½ lemon

  1. Mix your potatoes wedges with a little olive oil, salt and pepper and pop them in the oven at 200 degrees for about 25 minutes.
  2. While your potatoes roast. Toast your almond slices on a very hot pan until golden. Set aside.
  3. Bring a pot of water with a little salt to a boil and blanche your green beans for about 6-7 minutes. Drain and shake well to remove as much water as possible.
  4. In a bowl mix your green beans with a little olive oil, salt, pepper and almonds slices.
  5. Heat some oil in a pan and fry your Like Schnitzel until crispy and golden, about 2-3 minutes on each side.
  6. Serve your potatoes, beans and Schnitzel with plant based mayo and a squeeze of lemon on the schnitzel.
