Pasta salad is the perfect lunch if you ask us. Either for work/school or for like a first date picnic when you want to keep it casual, but also show that you can cook perfectly al dente pasta.

If you want to make this super portable, don’t mix the ingredients, but put them in 2 tall glasses, starting with dressing at the bottom, then pasta, Like Chick’n, radishes, bell pepper, onion and all the herbs and spinach. Shake well before serving.

- 1 package of Like Chicken Bites
- Oil for frying
- 1 tbsp soy sauce
- Juice of 1 lime
- 1 tbsp sesame seeds
- 1 whole corn on the cob
- 5 radishes – finely sliced
- 1/2 red bell pepper – in small dices
- ½ red onion – thinly sliced
- 1 handful of baby spinach leaves
- ½ handful of mint leaves – roughly chopped
- ½ handful of chives – finely chopped
- 1/2 handful of parsley – finely chopped
- 400g of cooked (al dente), cold pasta penne
- Dressing:
- 1 peach – skin and pit removed
- 2 tbsp olive oil
- 1 tbsp syrup
- 1 red chili – finely chopped
- Juice of ½ lime
- Pinch of salt

- Heat the oil on a pan and fry the Like Chicken bites for about 4 minutes. Add the soy sauce, lime juice and sesame seeds to the pan, fry for 1 more minute while stirring, so the soy doesn’t burn. Place in a bowl and set aside.
- To make the dressing add all ingredients to a high speed blender and blend until completely smooth. Have a taste and season with salt.
- On a hot pan or grill pan grill the corn on the cob and make sure to get some charred bits. Let it cool a little and cut the corn of the cob, sprinkle with a little salt and set aside.
- Mix, grilled corn, Like Chick’n all the veggies and herbs with the cooked pasta and drizzle with dressing.
