Like Pad Thai with Like Chicken Bites

It is so hard to make homemade pad thai as good as your holiday memories, but this recipe does hit the sweet spot, and it’s made entirely out of plants, even the “fish”sauce flavour.

The pad thai sauce is very, very good and can be used for so many things, so no that you have gone and bought tamarind paste, make some extra, but don’t put it in the dish. Just take a small pot. Bring it to a boil and then cool down and store in the fridge in an airtight container for at least a week. Try it on salads, in any stir fry and as a marinade for you tofu or Like Chicken Bites.

  • 150g broad rice noodles – cooked al dente, according to pack and rinsed with cold water
  • Pad thai sauce:
  • 2 tbsp tamarind paste
  • 1/2dl water
  • 2 tbsp sugar
  • 2 tbsp soy sauce
  • 1 sheet of nori seaweed
  • 2 tbsp sesame oil for frying
  • 1 package of Like Chicken Bites
  • 2 cloves of garlic – minced
  • 100g of bean sprouts
  • 2 carrots – cut into julienne sticks (like match sticks)
  • 2 spring onions – finely sliced
  • Juice and peel of 1 lime
  • Garnish:
  • 1 lime – cut in wedges
  • 1handful of coriander leaves – roughly chopped
  • 1/2 fresh red chili – finely chopped
  • 1 handful of salted, roasted peanuts – roughly chopped

  1. Make the pad Thai sauce by adding the nori sheet to the water. Leave for a few minutes, place all ingredients, including water/nori sheet in a tall stick blender glass and blend until completely combined.
  2. Heat a wok pan and pour in the sesame oil. Add the Like chicken bites and fry while stirring for about 3 minutes, until golden. Add in the garlic and give a stir.
  3. Add your bean sprouts, carrots and spring onion to the pan and fry for about 1 minute.
  4. Time to put in your rice noodles and pad thai sauce and heat it through.
  5. In with the lime peel and juice and have a taste, season with more soy sauce is needed. Serve with plenty of coriander, lime wedges, peanuts and chili
