Fajitas are the best, the combination of the sweet tangy bell pebers, spices with a kick and Like Grilled Chicken in a soft tortilla makes most people happy. Also, they are super quick to make. 

For a super green and glutenfree version of these use salad or cabbage leaves as tortillas.

What to buy?

Checklist

  • 1 package of Like Grilled Chicken
  • Oil for frying
  • 2 bell peppers 1 red and 1 green – cut in long slices
  • 1 yellow onion – cut in thin slices
  • 2 cloves of garlic
  • 1 tsp paprika
  • 1/2 tsp chili flakes
  • 1 tsp cumin
  • Salt and black pepper
  • Juice and peel of 1 lime
  • 1 handful of cilantro – roughly chopped
  • 4 medium flour tortillas

  1. Fry the onions in a pan in oil until soft and translucent. Add the like Grilled chicken and garlic and fry for another minute. Add the cumin, chili flakes and paprika and give it a stir.
  2. Pop the bell peppers in the pan and fry for about 2-3 minutes.
  3. Squeeze over the lime juice, toss in the lime zest, taste and season with salt and pepper.
  4. Serve on warm tortillas with extra lime and cilantro
