  • 10 oz dry pasta, pappardelle or tagliatelle shape
  • 2 tbsp olive oil
  • 1 package of Like Grilled Chick’n
  • 3 garlic cloves, minced
  • ½ glass of white wine
  • 8 oz package of baby spinach leaves
  • ¾ cup of plant-based cream *cashew or soy are great options
  • 1 cup basil leaves, torn into small pieces

  1. Bring a medium pot of water to a boil. Once the pot of water begins to boil, season the water with 1-2 tsp of salt and drop in the pasta noodles, cooking according to package instructions. Once cooked to an al dente texture, drain, rinse under tepid water, then shake away excess water and rest in a colander.
  2. Next, preheat a large skillet over medium-low heat for 2-3 minutes and toast the pine nuts (no oil) for 2-3 minutes until they develop a golden-brown color. Transfer to a bowl to be used later.
  3. In that same hot skillet, add the oil and the Like Grilled Chick’n pieces, stirring for 4-5 minutes. When the pieces are cooked and slightly golden brown on all sides, stir in the garlic until it becomes fragrant, then add the wine and reduce until it evaporates by 50%.
  4. At this point, add the spinach and cook until wilted. Pour the cream in the pan then add the basil, stirring until the spinach is evenly mixed into the sauce.
  5. Finally, dump the pasta into the skillet, and toss thouroughly, until pasta is heated through.
  6. Serve it Up: Portion and serve immediately. Garnish with plant-based parmesan and pine nuts.
