Birria tacos is hard to say without our mouths watering, seriously, the flavourful broth and Like Chick’n combo is hard to beat. 

This may seem like a lot of cooking time, but it’s worth it and you can make it way ahead of time and heat when needed. Or put it on in the morning, add an extra cup of water and let it simmer all day.

What to buy?

Checklist

  • 1 package of Like Chick’n Pieces
  • 6 small corn tortillas
  • 2 tbsp grated plant-based cheese
  • 1 handful of cilantro – finely chopped
  • ½ onion – finely diced
  • 3 tbsp olive oil
  • 1 tbsp plant-based butter
  • 1 onion – roughly chopped
  • 2 cloves of garlic - chopped
  • ½ can of chipotles in adobo sauce
  • 1 dried guajillo
  • ½ can of crushed tomatoes
  • 1 tsp dried oregano
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • ¼ tsp cinnamon
  • 1 bay leaf
  • 2 cup of veggie stock (or vegan chicken stock)

  1. First tear the Like Chick’n pieces with your hands, we want that shredded meat feel going.
  2. Heat the oil and plant butter in a pot and fry the onions, they should be soft and a little browned. Add cinnamon, cumin, paprika and garlic and stir while frying for another minute.
  3. Add remaining ingredients and bring to a simmer. Have a taste and season with salt and pepper.
  4. Let it simmer for at least half an hour without a lid. Get your guajillo chili out of the stew. Cut the stem of and put it back in.
  5. Remove the bay leaf and use a stick blender to blend completely
  6. Add in the Like Chick’n Pieces and let it simmer for another 2 minutes.
  7. Time to assemble your tacos. Fish out the like chicken bites and fry the for a few minutes on a man. Set aside. Heat the tortillas according to package and fry them in the pan. Add a little of the fried Like Chick’n pieces to one half of each taco. Close the taco and fry on the other side.
  8. Serve with chopped onion, plant-based cheese, birria stew for dip and fresh cilantro.
