  • 1 pack of Like Chicken Bites
  • 2 tbsp chunky peanut butter
  • 1 tbsp soy sauce
  • Juice of 1 lime
  • 50ml water
  • ½ cucumber
  • ½ medium spicy, red chili – finely chopped
  • 1tbsp sesame oil

  1. Begin by making the cucumber salad. Smash up the cucumber with a rolling pin (this helps it absorb the marinade) and cut the chunks into bit size pieces.
  2. Mix together the sesame oil, chili, and ½ the lime juice to create the marinade. Pour over the cucumber, and leave to marinate in the bowl while you make the satay.
  3. For the satay sauce, whisk together the peanut butter, soy sauce, the rest of the lime juice and 50ml water. Add in a drop more water if needed, until you have a smooth consistency.
  4. Place the Like Chicken Bites onto skewers then fry in a pan with a little oil, turning so that each side gets crisp. Coat the skewers in some of the satay sauce, and serve with the cucumber salad and some boiled rice.
