  • 1 carrot, sliced thinly using potato peeler
  • ½ cucumber, sliced thinly
  • 1 pinch of salt and sugar
  • 1 lime, juiced
  • 1 clove garlic, minced
  • 1 lime, juiced
  • 1/3 cup water
  • 1/3 cup peanut butter
  • 2 tbsp soy sauce
  • ½ tsp chili flakes
  • *¼ cup water as needed
  • 1 tbsp cooking oil
  • 1 package of Like Chick’n Nuggets
  • 5-6 medium sized red cabbage leaves
  • 1 Fresno chili, sliced thinly
  • ¼ cup green scallions, sliced thinly
  • ¼ cup peanuts, chopped

  1. Dissolve the salt and sugar into the lime juice in a large bowl, stirring with a fork. Toss the carrot and cucumber in the marinade and set aside.
  2. To make the peanut dressing, add all the ingredients to a blender or food processor and blend until smooth. If the sauce is too thick, drizzle in some water until you get a thick sauce-like texture.
  3. For the nuggets, preheat a large skillet over medium-low heat for 2-3 minutes, then add the oil and Like Chick’n nuggets, cooking for 2 minutes on each side until the pieces are crispy and golden brown on both sides.
  4. Serve it Up: Assemble your colorful wraps with some of the marinated carrot and cucumber mixture and some halved nuggets. Garnish with some red chilis, green scallions and peanuts then top with a drizzle of the spicy peanut dressing.
