  • 1 package of Like Chick’n Pieces
  • 4 wooden skewers
  • ½ green bell pepper - cubed
  • ½ yellow bell pepper - cubed
  • 1/2 red onion – in quarters
  • ¼ zucchini - sliced
  • 6 cherry tomatoes
  • Marinade:
  • ½ cup apple juice
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 tbsp brown sugar
  • 2 cloves of garlic – minced
  • Salt and pepper to taste
  • 1 tsp siracha
  • 1 tsp corn starch
  • 1 tbsp water
  • For serving
  • 4 tbsp plant-based yoghurt
  • 1 handful of fresh parsley – finely chopped
  • Your favourite bread

  1. Preheat the broiler to 460F. Divide your Like Chick’n and veggies into four portions and spear onto the skewers evenly. Make sure your tomatoes aren’t placed at the end or they could burn.
  2. To make the marinade: mix all of the marinade ingredients together (minus the water and corn starch) and heat in a small pot.
  3. Bring the marinade to a simmer, pour in the water and whisk in the corn starch to mix. Simmer for 2 minutes until the marinade is thick and shiny, then take off the heat.
  4. Line an ovenproof dish was baking paper and place the skewers on top. Brush them with marinade on all sides, then place under the broiler for 7 minutes. Turn the skewers and brush again with the marinade. Continue to broil for another 4 minutes.
  5. Serve with bread, plant-based yoghurt, parsley and a drizzle of any leftover marinade.
