Is it a taco? Is it a stew? Baby, it’s the best of both worlds. Follow our recipe to make these mouth-watering Birria tacos with our classic Like Chick’n pieces.

What to buy?

Checklist

  • 1 package of Like Chick’n Pieces
  • 6 small corn tortillas
  • 2 tbsp grated plant-based cheese
  • 1 handful of cilantro – finely chopped
  • ½ onion – finely diced
  • For the stew:
  • 3 tbsp olive oil
  • 1 tbsp plant-based butter
  • 1 onion – roughly chopped
  • 2 cloves of garlic - chopped
  • ½ can of chipotles in adobo sauce
  • 1 dried guajillo
  • ½ can of crushed tomatoes
  • 1 tsp dried oregano
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • ¼ tsp cinnamon
  • 1 bay leaf
  • 2 cup of veggie stock (or vegan chicken stock, if you have it)

  1. Start by tearing the Like Chick’n pieces in your hands by pulling them apart to create a shredded texture.
  2. Heat the oil and plant butter in a pot and fry the onions until soft and a little browned. Add the cinnamon, cumin, paprika and garlic then stir while frying for another minute.
  3. Add the remaining ingredients for the stew and bring to a simmer. Season to taste with salt and pepper.
  4. Let the stew simmer for at least half an hour with the lid off. When ready, remove the guajillo chili from the stew (careful, it’s hot!) cut off the stem and put it back in the sauce.
  5. Remove the bay leaf, then use a stick blender to blend the sauce completely.
  6. Add in the shredded Like Chick’n Pieces and let it simmer for another 2 minutes.
  7. Time to assemble your tacos. Scoop out the shredded Like Chick’n and fry the for a few minutes in a pan on high heat. Set aside. Heat the tortillas according to your package instructions then fry them in the pan for a few seconds. While still in the pan, add a little of the fried Like Chick’n pieces to one half of each taco, close and flip to fry on the other side.
  8. Serve the tacos with the Birria stew to dip in, plus some chopped onion, plant-based cheese, and fresh cilantro.
