What to buy?

Checklist

  • 1 package of Like BBQ Chick’n
  • 3 tbsp of your favourite BBQ sauce (we love hickory smoked)
  • Oil for frying
  • 1 handful of fresh or frozen corn kernels
  • ½ tbsp cumin
  • Salt
  • ½ red onion – finely sliced
  • 12 small corn tortillas
  • Cilantro for garnish
  • For the guacamole:
  • 3 avocados
  • 1 clove of garlic - minced
  • ½ small yellow onion – very finely chopped
  • Juice of 1 lime
  • Salt and pepper to taste

  1. Fry the Like BBQ Chick’n in a little oil in a non-stick pan for a few minutes on high heat.
  2. Add the BBQ sauce to the pan. Turn down the heat to medium and let it fry until caramelized for about 6 minutes, while stirring occasionally.
  3. In another pan, fry the corn kernels in a little oil until slightly golden. Season with salt and add in the cumin.
  4. To make the guacamole, slice open the avocados carefully and scoop the insides into a bowl. Mash the avocados with a fork, then add the lime juice, garlic, and onion and mix together well. Season with salt and pepper to taste.
  5. Heat a dry pan on a high heat and toast the corn tortillas. You’ll want to stack 2 tortillas per taco to mop up all that delicious BBQ juiciness.
  6. Load 6 tortilla stacks with plenty of guacamole, BBQ chick’n, corn, onion and cilantro.
