As promised, here are our recipes for Like Turkey Pie and green Bean Casserole. Serve these two bad girls with some cranberry jam and sweet potato/ yam mash… YUM!
Like Turkey Pie
1 pack of Like Chicken Bites
A sheet of puff pastry
1tbsp vegan butter
1 can of asparagus (also about half the brine)
200g of frozen green peas
2large carrots – in pretty little cubes
1 onoin finely chopped
3dl plant cream
Salt and pepper
1tsp cornstarch mixed in 1/2dl water.
So, this is super simple, super old school and super tasty.
Fry the onion and Like Chicken Bites in the vegan butter, untill the onions are soft and the Chicken bites are hot.
Add the carrots and asparagus brine and let it simmer for about 5 min. Add the asparagus, green peas, plant cream and bring it to a simmer. Add in the cornstach mix to thicken, it should be like a thick gravy consistency.
Spread your filling in a pie dish and cover with the puff pastry, cut excess pastry of and if you’re feeling creative cut some figures and put them on top of you pie lid.
Brush with olive oil and bake in the oven for about 20 min at 180 degrees until the pie lid is golden brown and the filling is bobly.
Green bean caserole
500g of green beans (frozen is fine, but not canned, OK?)
100g of mushrooms – sliced
1/2 onion – finely chopped
1 clove of garlic – minced
1 tbsp vegan butter
2dl plant cream
Salt and peber
A handfull of fried onions (store bought is perfect)
Fry the onion and garlic in the butter at medium heat until soft and slightly golden. Add in the plant cream, season with salt and peber and stir in the green beans.
Sprinkle with fried onion and pop the pan in the oven for about 10 min at 200 degrees
