What to buy?
2 packs of Like Curry Chicken
400 grams of pandan rice
1 red pointed pepper, roughly chopped
200 grams of sugar snap peas
1 red onion, finely chopped
Red pepper to taste
2 cloves of garlic, finely chopped
2 stalks of fresh coriander, roughly chopped
1 cube of vegetable stock (for approx. 0.5 liters of stock)
A dash of sunflower oil
200 ml coconut milk
100 ml of water
Juice of half a lime
1 teaspoon of curry powder
Half a tablespoon of turmeric powder
Salt to taste
Let's do this!
Prepare pandan rice according to the instructions on the packet.
Heat sunflower oil in a pan. Sauté the onions, garlic and the red pepper until translucent. Add pointed peppers and sugar snap peas and fry for about 5-10.
Add the Like Curry Chicken.
Add water, coconut milk, turmeric, curry and vegetable stock cubes and simmer over low heat, stirring gently.
After about 10 minutes stir in the juice of half a lime. Season to taste with salt and pepper.
Season with salt and pepper.
Decorate with coriander and serve.
