Potato tacos

Potato tacos
The name is sort of made up, but you CAN fold these little potato “cakes” as a taco, or eat them as they are with a knife and fork 😉
What you’ll need:
1 package of Like Chicken Bites
2 large baking potatoes
1 large carrot
salt and peber
1tsp dried, crushed rosemary
1 tbsp oil
1 avokado – thinly sliced
1 red onion – thinly slices
juice of 1/2 lemon
salt
1 tsp sugar
a handfull of chopped coriander leaves
What you need to do:
Mix the lemon juice, salt and sugar in a small bowl, when the sugar is dissolved put the thinly sliced onion in the mix and leave it until you are ready to serve.
Wash the potatoes and carrot but leave the peel on. Grate them on the biggest side of you grating iron. Press out as much water as you can from the grated potato /carrot mix.
Now mix in the salt and peber and ground rosemary. Divide the mix into 4 and make flat round potatoes cakes on a baking sheet. Drizzle with oil and put them in a preheated oven at 200 degrees for about 15 minutes, check on them they should be crispy brown on the sides and soft in the middle.
Fry the Like Chicken bites, season with salt and peber.
put your potato tacos together with avokado, drained pickled red onion, Like Chicken Bites and a good sprinkle of coriander.
