Cauliflower risotto

With a cauliflower risotto you have an updated fiber-filled-veggie-packed-low-carb version of the Italian classic. The Like Chicken Bites make sure you get a good shot of lean protein, what’s not to love?

 

What to buy

1 pack of Like Chicken Bites

1 cauliflower

oil for frying

1/2 lemon – just the juice

1 leek

2 cloves of garlic – finely chopped

1/2 eggplant – in thin long slices

1/2 dl Plant based cream

 

What to do

salt and peber.

First clean and rinse the cauliflower and grate it on a grater or break it into pieces and put it in a food processor and pulse a few times. What you want is cauliflower that looks kindda like rice.

Fry the Like Chicken bytes in a little oil until golden. Set them aside.

Fry the aubergine slices on a griddle pan until they are tender and little browned. Set aside.

Rinse and and thinly slice the leek, use the green part too (no food waste and it is so tasty) save a bit of the greenest slices for garnish.

Fry the leek and garlic in a little oil at medium heat until soft and translucent. Add the cauliflower and fry for a few minutes, pour in the plant cream and lemon juice. season with salt and peber.

Stir in the fried aubergine and like chicken bites.

Serve in bowls and spinkle with the green leek tops.
