Cauliflower pizza

First dish of this weeks meal plan!
This vegan or plant based pizza is way healthier than a normal pizza, but the most important thing is how good it is! You HAVE to try it 🙂
Cauliflower pizza:
What you need:
1 Package of Like grilled Chicken
1 cauliflower
2 tsp baking powder
1dl water
1/2 dl flour (for a glutenfree version try ground GF oat flakes)
1/2 tsp salt
150g of tomatoes – finely chopped
1/2 onion – finely chopped
1 clove of garlic – minced
1 tsp dried oregano
oil
2 handfulls of you favourite plant cheese
What to do:
Cut the cauliflower into small pieces, steam until soft and drain them. Let the cauliflower cool down, blend or mash it. Using a tea towel drain as much excess water out as possible. Put the mashed, drained cauliflower in a bowl, add the remaining ingredients and mix it well.
Place a baking sheet on a baking tray. The dough is a bit sticky so put another baking sheet on to and use your hands or a rolling pin to create either one big pizza or two smaller ones. About 1cm thick. Bake for about 25 minutes at 180 degrees.
While baking make the quick tomato sauce. Fry onion and garlic, add tomatoes, and oregano and let it simmer until the cauliflower crust is done.
Top the crust with tomato sauce, plant cheese and like Grilled Chicken and bake for 8-10 more minutes.
