Yellow Curry

This is a simple, but super tasty yellow curry, and make sure to go get a good yellow curry paste, it makes it so much better.

 

What you need:

1 package of Like Chicken Bites

oil for frying

1 onion – diced

2 tbsp  yellow curry paste

1 can of coconut milk.

1 broccoli – pick into small bunches- save the stalk, you’ll need to later this week.

2 large carrots – in very thin slices

1 tbsp brown sugar

2 tbsp soy sauce

1 lime – just the juice

2dl quinoa – cooked according to package

 

What to do:

Add the coconut oil to a large pot over medium high heat, in with the onion and fry for about 2-3 minutes. Add the like Chicken Bites

Add the yellow curry paste and cook for 2 minutes.

pour in the coconut milk and bring to a simmer.

Add the broccoli and carrots, simmer for 3-4 minutes.

Add the Like chicken and continue simmering for 6-8 minutes.

Stir in the brown sugar, soy sauce and lime juice.

Serve with quinoa and maybe a sprinkle of sesame seeds, peanuts or spring onions.
