Tortilla soup

 

This soup is perfect for emptying you fridge. Substitute any of the ingredients for what you have, heck these days you can even leave out the Like Mince or use a different plant mince if you have that (this is not something you’ll hear us say everyday 😉

 

1 pack of Like Mince

1 corn tortilla

1 cup of corn

1 green bell peber – diced

1 red bell peber – diced

1 onion – chopped

1 can of beans, whichever you have are fine, we used kidney.

1 medium hot chili – sliced

2 cans of tomato passata

3dl water

Olive oil

1 tsp cumin

1 tsp smoked parika

 

 

Fry the onion with the cumin and paprika. Add beans, green and red peber and chili. Fry for a few minuttes. Add the Like Mince and fry for 2 minuttes.

In with the canned tomato and water, bring it to a boil and let it simmer until you are ready to serve, but at least 20 minutes.

Heat a pan and fry the tortilla in a little oil until golden and slightly crispy. Cut it in whatever whape you like and serve the soup with tortilla slices to scoop up the goodness.
