Stuffed hokkaido

We love orange!
Both the fruit and the colour, there are no oranges in this recipe, but it’s still very orange 😉
What you’ll need:
1 package of Like Mince
1 hokkaido pumpkin
1/2 onion – finely chopped
1dl brown rice – cooked according to package
1dl coconut milk – (freeze the rest of the can and use it another day)
1 tbsp soy sauce
1/2 tsb curry powder
2 spring onions – finely chopped
1 red chili – finely sliced
What to do:
First cut the hokkaido in half take out the seeds, with a spoon (you can use them as a snack if you dry them out with a bit of soy sauce for 30 min at 100 degrees in the oven). Place the 2 halves on a baking tray and pop them in the oven at 180 degrees for about 30 minutes. Check if they are tender, if not, give them a bit longer. How long they need to bake depends a lot on the size of the pumpkin.
Fry the onion until soft, add curry and Like Mince, fry for a few minutes. Add the rice, spy sauce and coconut milk. Cook the mix for a few minutes.
Get about half the “meat” from the hokkaidos, making sure there is still enough in the peel so that it doesn’t break. Mix the pumpkin meat with the rice and LikeMeat and fill the two hokkaido halves with the whole thing. Back in the oven for about 10 min on 200 degress, just to get a bit of crispiness on top.
sprinkle with fresh chilies and spring onion.
