Stuffed aubergine

Stuffed aubergine:

What you’ll need:

1 package of Like Mince

2 aubergine

1 pomme grenade

1 zucchini – in thin slices

10 cherry tomatoes – cut in half

50 g of almonds – chopped

1 tsp of soy sauce

a pinch of smoked paprika

oil

 

Do this 😉

First cut the aubergines in half. Use you hands to rub oil on the cut surface. Place them with the oiled cut down on an oven proof tray with a sheet of baking paper on.

Bake them in a preheated oven at 180 degrees for about 10 minutes.

Mix the mince, tomatoes and zucchini with salt peber and smoked paprika.

Mix the chopped almonds with soy sauce.

When the zucchini is done, take it out, turn them around and divide the mince filling on all four. top with soy marinated almonds and pop them back in the oven for about 10 minutes.

Serve with pomme grenade seeds and plant yoghurt. Yum!
