  • 1 pack of Like Gyros
  • 1 large beetroot (about 300g)
  • 1 clove of garlic
  • ½ lemon (just the zest)
  • 1 handful of mixed, fresh herbs – dill, mint, basil, parsley or chives
  • 150ml Greek yoghurt/light crème fraiche
  • ½ can of chickpeas
  • ¼ tsp cumin
  • 1/2 tsp chili flakes
  • 8 cherry tomatoes – cut in half
  • ¼ cucumber - finely diced
  • ½ red onion - finely sliced
  • ½ handful of black olives
  • Salt and pepper

  1. Start by making the beet tzatziki. Heat your oven to 200C, and clean the beets. Rub them with a little olive oil and salt then place on a baking tray in the oven for about 50 minutes. If they are really large they might need longer. Test with a fork, they should be tender but still have a little bite.
  2. Let the beets cool for a little while then grate them, this will help them cool faster. Leave to rest until they’ve reached room temperature.
  3. Mix the yoghurt/fraiche with the minced garlic, lemon zest, salt and pepper. Then pour in a bowl with the cooled beets and chopped herbs.
  4. Fry the Like Gyros and drained chick peas in a pan until slightly crispy. Keep them a little separated, then add chili and cumin to the chickpeas.
  5. Make a beautiful bowl by arranging your veggies, tzatziki, chickpeas, and Like Gyros together with a sprinkle of herbs.
