  • 1 package of Like Pulled BBQ
  • 2 tbsp olive oil
  • 2 onions
  • 3 cloves of garlic
  • 400g beetroot
  • 300g of potato
  • 1L of veggie stock
  • 1 lemon – just the juice
  • 1 tsp grated horseradish

  1. Peel the beets and potatoes then cut into chunks. Chop the onion and garlic together and heat some oil in a large pan.
  2. Fry the onion and garlic until soft, then add the beets and potatoes and fry for 1 minute while stirring.
  3. Pour in the veggie stock, then bring to a boil and leave to simmer under a lid for about half an hour until the potatoes and beets are totally tender.
  4. Add the lemon juice, horseradish and blend until completely smooth.
  5. Heat some oil in a pan and fry the Like Pulled BBQ pieces for a few minutes until slightly crisp. Add to the blended soup mixture and give it a few more minutes to heat through.
  6. Serve with your favourite bread, fresh parsley and a dollop of crème fraiche.
