
What to buy?

1 package of Like Mince (frozen)
4 large tortilla flatbreads
Oil for frying
1 onion, finely chopped
1 green bell pepper, chopped
2 cloves of garlic, minced
1 tsp cumin
1 tsp ground coriander
Chili flakes to taste
1 can of chopped tomatoes or 300g fresh tomato, chopped
1 avocado, thinly sliced
The “Cheese”
1 large sweet potato, boiled until completely tender
1 tbsp nutritional yeast
1 tsp white miso
1 tbsp mustard
Let's do this!
In a pan, fry the onion until soft, add minced garlic, cumin and ground coriander fry for about 1 minute. Add the Like Mince, bell peber and chili flakes, stir and let it fry for a few minutes. Add the tomatoes and let it simmer for 15 minutes, until it is less watery.
The “Cheese”
In a high speed blender, blend all the ingredients, that’s it. Add more salt if needed.
Toast the tortillas on a dry pan and assemble your quesadillas. On the two bottom tortillas, make layer of Like Mince sauce, a layer of cheese, some avokado and close them with the top tortilla. Press lightly around the edges and cut into four slices each. Enjoy!
