
Larb - national dish of Lao with Like Mince

What to buy?

1 package of Like Mince (frozen)
Oil for frying
5 small romaine salad leaves, rinsed
5 small purple cabbage leaves, rinsed
1 tbsp rice
2 tbsp vegan fish sauce (simmer 2 dl soy sauce with 2 whole nori seaweed sheets, 1 tsp brown miso, juice of 1/2 lemon for 3 minutes, drain. keeps for weeks in the fridge)
Juice of 2 limes
1 onion, finely sliced
1 handful of mint leaves, chopped
1 handful of thai basil leaves, chopped
1/2 fresh chili, thinly sliced
Let's do this!
In a dry pan, fry the rice, until golden, stop before they pop. In a coffee grinder or mortar, grind the rice to a fine powder. Set aside.
In a pan, fry the LikeMeat Mince until lightly browned. Add the onion, lime juice, vegan fish sauce and rice powder. Mix well.
Get your salad and cabbage leaves ready on a plate. Mix the mint, thai basil and fresh chili with the larb and serve in the salad and cabbage leaves, like a taco.
Tip
Make sure you guard your meal, it will disappear before you know it!
