Bangers and sweet potato mash with Like Sausage

What to buy?
1 pack of Like Sausage
400g sweet potato, peeled and diced
Juice of 1/2 lemon
1tbsp olive oil
300 g frozen green peas
10 chopped green mint leaves
1 red onion, very thinly sliced
2 tbsp of apple cider vinegar
1 tbsp sugar
Salt and pepper
Let's do this!
First combine the apple cider vinegar, sugar and a pinch of salt until the sugar is dissolved and then pour the mixture over the finely sliced red onion. Leave to pickle while you cook the rest.
Boil the diced sweet potato until tender (10-15 minutes). Drain the water and mash the potatoes in a bowl with a fork. Season with salt, lemon juice and add a drizzle of olive oil. Season with some freshly ground black pepper.
Fry the Like Sausage in olive oil until golden. Steam the green peas for about two minutes. In a bowl, mix the green peas, drained pickled red onion, chopped mint leaves and a pinch of salt.
Plate up with a couple of spoonfuls of sweet potato mash, top with the bratwurst and serve with a side of peas.
