Ratatouille:

The last dish of this weeks meal plan is the ratatouille, such a classic, and for good reason. If you have used our shopping lidt, you have the ingredients for this, but remember any veggies can be used in a ratatouille, it’s great to reduce food waste, use up any left over veggies from this week.

 

You’ll need:

1 package of Like Chicken Bites

1 large eggplant – cut into cubes

1 zucchini – cubed

2 large potatoes – in cubes

1 onion – finely chopped

3 cloves garlic – chopped

250g tomato either fresh or canned

2dl water

1 tablespoon tomato paste

1 teaspoons thyme

1tsb rosemary

3/4 teaspoon sugar

salt and peber

 

Recipe:

Fry the onion and garlic until soft, add potato, eggplant, zucchini, thyme and rosemary. Let it fry with the onions for about 3 minutes, while stirring occasionally. Add the tomatoes and water. Let it simmer for at lest 20 minutes, it’s OK if the potatoes get really soft. Season with a bit of sugar, salt and peber to taste.

Fry the like Chicken Bites in a little oil until it’s golden and even crispy in some parts.

Serve with bread and a sprinkle of fresh parsley.
