Pigs in a blanket!

It’s a christmas classic in some countries and we don’t hate it….

Seriously we are huge fans of pigs in blankets, both our vegan version with Like Smoked Sausage and rice paper fakon, but also ACTUAL pigs in ACTUAL blankets, so if you know a pig, wrap it in a blanket and share some Like Pigs In a Blanket with your pig friend. If you don’t have a pig friend just eat them by yourself or with human friends 🙂

Pigs in a blanket

1 pack of Like Smoked Sausage

2 sheets of rice paper – cut into four strips each

2 drops of liquid smoke or 1 tsp of smoked paprika

4 tbsp of soy sauce

1 dl hot water

Mix the liquid smoke/paprika, soy sauce and hot water in a shallow plate.

Soak the rice paper in the mix until soft and place the strips on a sheet of baking paper.

Cut each sausage in half and roll a piece of marinated, soft rice paper around each. Put them on a baking sheet on a tray and brush them with olive oil.  Feeling fancy? Put them on a skewer made from rosemary twigs, just a tip.

Pop them in the oven at 200 degres for about 15 minutes (turn them halfway) check on them and get them out when the ricepaper is crispy, salty and greasy golden brown.
