Pasta salad
Pasta salad is probably the original empty you fridge dish, it’s old school, but it can be as funky as you like depending on which veggies are hiding in you fridge. This is what we did:
1 pack of Like Chicken Bites
1/2 zucchini – sliced
½ a red onion – thinly sliced
250g of whatever pasta you have in your cupboard – cooked al dente and cooled down
2 handfulls of chickpeas
2 handfulls of salad
1 handfull of basil leaves
10 cherry tomatos – in halves
A handful of olives – pitted and sliced
1dl of roasted hazel nuts – chopped (could be pine nuts, almonds or even peanuts)
Fry the Like Chicken Bites until golden, add the chick peas and some salt and peber. Fry for a few minuttes and then cool down.
On a griddle pan grill the zuccini until it has those pretty stripes.
When everything has cooled down, mix it all-in a large bowl and add the dressing.
Dressing:
juice of 1 lemon
1 clove or garlic
Salt and peber
1 tbsp dried oregano
2 tbsp olive oil
1 tsp sugar or syrup
Whisp together all the ingredients and drizzle over your pasta salad.
