This burger is simple, good food and you can make it more of a meal by picking a dark bun with some grain and fibers. We serve it with lovely sweet potato fries that make this a real treat.
What you’ll need
1 pack of juicy burgers
2 burger buns – pick your favourite
1/2 aubergine – in 0,5cm slices, the long way.
1 large tomato – sliced
For the humus:
1 can chickpeas – drained
1 clove garlic
1⁄4 cup olive oil
1/2 lemon – just the juice
4 tablespoons tahin
1 teaspoon ground cumin
Sweet potato fries:
1 large sweet potato – peeled and cut for fries
What to do
First, get your sweet potato fries in the oven. Drizzle with olive oil, salt and oregano, mix them and fry them in the oven at 200 degrees, for about 30 min. Check on them and give them a gentle stir about half way through.
Blend all the ingredients for the hummus, until super smooth, add water if you need it to be smoother.
Fry the aubergine slices on a griddle pan, until tender and nicely browned, give them a pinch of salt and freshly ground pepper.
Fry your burger buns and LikeMeat juicy burgers in a little olive oil.
When the burgers and buns are done, assemble the burgers with hummus on both bottom and top bun, salad, aubergine, salad, juicy burger and tomato. Close the burgers and serve with your lovely orange fries.
