
Dinnertime
Like Schnitzel and veggies

What you’ll need:
1 package of Like Schnitzel
1 large sweet potato
1 tbsp good olive oil
A handfull of fresh parsley – chopped
500g brussel sprouts
sesame seeds
juice of 1 lemon
sesame oil
salt and pepper
Slices of lemon and fresh cress for garnish
What to do:
Peel the sweet potato and cut it in smaller pieces. Boil until very tender, for about 10 minutes (depending on the size of the pieces, check tenderness with a fork).
Rinse the brussels sprouts, cut the ends of and cut them in halves. Mix them with sesame oil, sesame seeds and soy sauce. Pop them in the oven at 180 degrees for about 15 minutes until they are tender with a bite and some crispy bits.
When you sweet potato is tender. Drain it (save some boiling water to just thickness) mash with a fork, add olive oil, salt and pepper. If you want it less thick add some of your boiled water. Right before serving mix in the parsley.
When you have your sprouts and mash ready, fry your schnitzels until golden brown and crispy. Serve with cress, lemon and maybe a spoonful of aioli.
