Kale Wraps

What you’ll need:

1 package of Like Gyros

2dl cous cous

2dl boiling water

olive oil

juice of 1/2 lemon

salt and peber

4 large cabbage/kale leaves

1/2 red onion – thinly sliced

1 avocado – thinly sliced

10 cherry tomatoes – in halves

for dip:

2 tbsp crunchy peanut butter

1 tsp dark soy sauce

1/2dl boiling water

1/2 tsp chili flakes

Juice of 1 lime

 

What to do:

Put the cous cous in a bowl and pour over the boiling water, a tsp of olive oil, the lemon juice and a pinch of salt and peber. Give et a stir and cover with a plat for about 10 min.

Blend all ingredients for the dip.

Fry the Like Gyros in a bit of oil, until golden and with some crispy bits.

Now blanche the cabbage leaves in boiling water for about 30 seconds. That will make them softer and very brith green 🙂

Now it’s time to roll up your wraps. Get the cous cous fluffy with a fork and put som in each leaf, top with avocado, tomatoes and Like gyros.

Serve with the dip and you’ll be smiling.
