Leeks in a blanket.
This recipe is a classic Danish 80s dish. But it’s great, so try it. We’ve made it vegan!
What you’ll need:
1 package of Like Juicy Burgers – defrozen
1 large leek – cleaned and cut in 2 pieces about 7 cm long
17” onion – chopped
4 large carrots – in small cubes
4 large potato – in small cubes
200g of frozen peas
2dl of plant cream
salt and pepper.
What to do:
First boil your carrot and potato cubes for about 5 min in salted water. Drain and set aside.
Blanche the leek in boiling water for about 2 minutes. Drain and pat the leek dry. Now use the defrozen Like Juicy Burgers to wrap the leeks, they need to be fully coveres by Juice plant Meat 🙂
Fry the Juicy Burger wrapped leeks in a little olive oil until golden. Pop the in the oven on 150 to keep warm.
Fry the onion until soft, add the prevailed carrots and potato, fry for a few minutes, add plant cream and peas, and bring to a simmer. Season with salt and peber and serve with your Juicy leeks 🙂
