Gnocchi and sausages

Gnocchi and sausages, simply, satisfying, vegan, plant based – your new favourite comfort food
What you’ll need:
1 package of Like Sausage
oil for frying
500g of gnocchi – store-bought or homemade. – cooked according to instructions
10-15 leaves of palm cabbage/Nero de Tuscano – rinsed and stalk removed. (see the photo to see what we mean:)
2 handfulls of basil leaves and stalks – roughly chopped
1 handfull of pine seeds – lightly roasted
1/2 dl good olive oil
1/2 clove of garlic
1 tips of lemon juice – might need more
salt and freshly ground pepper
What to do:
Make the pesto first. Just add all the ingredients to a high speed blender or use a mortar to make a creamy pesto. Remember to taste and add salt, lemon and pepper as needed.
Fry the Like Sausages, they need about 8 minutes at medium heat where you turn them every now and then to make sure they don’t burn. Keep them warm while you finish the dish.
Heat some olive oil on a large skillet. Fry the boiled gnocchi until golden and delicious. Add the cabbage leaves and let them soften for a few minutes.
Stir in the pesto and give it a squeeze of lemon juice, a good pinch of freshly ground pepper.
Serve with the Like Sausages for a full meal and plenty of protein.
