Crunchy Like Gyros wraps

For this wrap you’ll make your own lentil hummus, pickle some veggies and fry up LikeGyros, easy and delicious.
What you’ll need:
1 pack of Like Gyros
2 large flatbreads or 4 if they are smaller
3 carrots – grated
1/2 purple cabbage – finely sliced
1/2 cucumber – in long slices
2 tbsp apple vinegar
2 tbsp agave syrup (or sugar)
salt
For the lentil hummus:
2 cups water
1 cup dried red lentils
2 medium garlic cloves, finely chopped
4 tablespoons tahini
0,5dl olive oil
Lemon juice from 1 lemon
salt
pepper
This is how it’s done:
First do the hummus, it’s better if it cools down before serving (pro tip: Make a double portion, because you’ll want more tomorrow;)
Boil the lentils in the water until almost all the water is absorbed. Drain them and leave the to cool for about 20 minuttes. Add the lentils and all the other ingredients to a really good blender a pulse until you have a creamy hummus. In case you want it thinner add a bit of water or olive oil.
Then it’s veggie time. Mix the agave syrup with a little salt and the vinegar. Mix the veggies in a big bowl and pour over the vinegar mix. Massage the veggies for a few minutes. Set aside.
Fry the Like Gyros in a little oil, heat the flat breads and roll up some super healthy wraps, with PLENTY of protein and fibers – cause that’s how plant heads roll!
