It’s almost christmas…… YES!

Here is our recipe for this lovely “Veglington”, enjoy and merry christmas 🙂
1 large sheet of puff pastry cut in half (store bought is fine just check to make sure it’s vegan)
1 pack of Like Grilled Chicken
200g of mixed mushrooms – very finely chopped
1/2 onion – finely chopped
1 dl of good red wine
1carrot – finely chopped
Two bay leaves
Two sprigs of fresh thyme
1 tbsp of cornstach
Salt and peber
2 tbsp of good vegan pesto.
1tbsp light soy sauce.
First fry the onion untill soft, add mushrooms and Like Grilled Chicken let it all fry at medium heat for about 4 minittes. Add carrot, red wine, and herps to the mix. Let it simmer untill most liquid has evaoprated (you’ll want it quite dry). Season with salt and peber.
Let the mix cool off, remove the fresh herps and mix in the corn starch.
Now you want to make some very pretty individual vegllingtons.
Spread pesto on the puff pastry sheets and put half the filling on each sheet. Carefully close them and turn them around so the closing is facing the baking tray.
Now you can get creative with excess pastry or a knife, make the pastry christmas worthy. Brush the dough with light soy sauce.
When you’re done, bake them in the oven at 180degrees for about 20 minuttes or until golden brown.
Serve with roasted veggies, potatoes, brussel sprouts and good gravy and a whole lotta love.
