We love pasta, all pasta.

 

Cannelloni is kinda like lasagne, but fancier. And these little rolls stuffed with Like Grilled Chicken and spinach are so tasty they are sure to be a hit.

 

Stuffing them can be tricky, but if your filling is nice and thick, you just stand your cannelloni tube on the tabletop and use a spoon to scoop in the filling 🙂

 

You’ll need:

1 package of Like Grilled Chicken (will work perfectly with Like Kebab or Like Chicken Bites aswell)

Oil for frying

8 large cannelloni tubes (or lasagne sheets, to roll instead)

1 onion – finely chopped

500g of spinach – fresh and frozen both work, but is using frozen make sure to defreeze and drain well.

2,5 dl plant cream

1/4 tsp nutmeg – finely grated

Peel of ½ lemon

 

Tomato sauce:

2 onion – finely chopped

2 cloves of garlic – minced

Oil for frying

1 can of chopped tomatos

1 tsp dried oregano

1 tsp dried thyme

Salt and peber

 

2 tbsp nutritional yeast

2 tbsp bread crumbs 8use stale bread and grate it or storebought panko)

 

Do this:

If you’re using cannelloni tubes, precook them for a few minutes until very al dente. If you’re using lasagne sheets and roling them like cannelloni, you need to cook them just enough to be able to roll them, but not completely soft.

 

Fry the Like Grilled Chicken, onion and garlic for a few minutes. Add the spinach and give it a few good stirs. Add the plant cream, nutmeg and lemon peel.

 

Let it reduce for about 10 minutes, it should be quite thick.

 

While the filling reduces, put your tomato sauce over. Fry onion and garlic until soft, add the tomatoes and spices and let it simmer for about 30 minutes (it will reduce even more in the oven)

 

To make your cannelloni find a square pan that can go in the oven. Fill the cannelloni tubes with the spinach and LikeMeat filling and line them up next to each other in the pan. If you’re using lasagne sheets use the precooked sheets to roll cannelloni around the filling and put them with the opening on the bottom of the pan.

 

Pour your sauce over the cannelloni and use a spoon to make sure it gets all over your rolls and in between them aswell. Sprinkle with nutritional yeast and bread crumbs. Bake in the oven at 200 degress for about 25 minutes.

 

Serve with a green salad and a glass of wine, unless if you’re serving it for kids, wine for you, water for the kids, we like that rule 😉
