Biksemad or Rydbergs

This is sort of a Scandinavian classic, in Denmark it’s called Biksemad and the Swedes call it Rydberg. It’s super simple, and old school zero waste cooking. It’s basically potatoes and meat, in this case LikeMeat and you can add “need to use veggies” from the fridge.
Let’s eliminate food waste together.
What you need:
1 pack of Like Gyros
oil
600g potatoes – in small 1cmx1cm dices
1 onion – finely chopped
oil
300g of green beans – fresh or frozen
1 tsp smoked sweet paprika
salt and pepper
chives
Tarragon mayo:
100ml plantmilk
200ml sunflower oil
2 tsp white vinegar
1 tbsp sugar
2 tbsp tarragon – dried or fresh
What to do:
Put a baking sheet on a baking tray and mix your potatoes, Gyros, onion, paprika, oil, salt and pepper on the tray. Pop it in the oven for about 15 minutes, until everything is lightly golden. Add the green beans and give it a stir.
Roast in the oven for 5 more minutes.
Tarragon mayo is super easy. Mix the vinegar and tarragon in a glass and let it soak for about 10 min. Add all ingredients including tarragon vinegar in a high speed blender and mix the whole thing, voila tarragon mayo.
Serve your Biksemad with a green salad and maybe something pickled, like cornichios, red onions, pickled beets or whatever is in you fridge that has that pickled vibe.
Sprinkle with chopped chives and serve with a generous spoonful of tarragon mayo.
